At Il Castello, pizza is created from the combination of Sicilian tradition, creativity and ingredients closely connected to the local area. Each recipe tells the story of the High Madonie through selected flours, local cheeses, cured meats, vegetables and seasonal produce.

A long-matured dough
The quality of a pizza begins with its dough. Our special flour blend includes ancient Sicilian grains, wholemeal flour, type 0 flour and toasted bran.

The dough matures for a minimum of 72 hours and up to 100 hours, with hydration reaching 70%. Another distinctive ingredient is the untreated water sourced from a natural spring in Geraci Siculo.

The result is a fragrant, flavourful and pleasantly light pizza, designed to enhance every ingredient without overpowering its natural taste.

Local Madonie ingredients take centre stage
Madonie sausage, caciocavallo cheese, fresh ricotta, vegetables from Masseria Sant’Elia, Ferla mushrooms and confit cherry tomatoes are just some of the ingredients used to create distinctive pizzas inspired by Sicily.

Among the recipes that best represent the local area is Piano Battaglia, prepared with buffalo mozzarella, basil pesto, potatoes, sausage and Madonie caciocavallo cheese.

The Il Castello pizza combines buffalo mozzarella, caciocavallo cheese, wild chard and Madonie sausage, bringing simple and deeply rooted local flavours to the table.

The menu also includes creative, vegetarian and seasonal pizzas, together with pizzas served on wooden boards and special pan-baked varieties, created for those who enjoy discovering new combinations without giving up tradition.
